Cut a garlic clove in half and swipe around the bottom and sides of the double boiler. Pour in a tablespoon of lemon juice and a cup of white wine. Heat until little bubbles appear. Grate 1 pound of a mix of Emmentaler and Gruyere cheeses. Mix cheese with a tablespoon of corn starch. Put the cheese in the wine mixture. Add a dash of baking soda and nutmeg. Heat until cheese is melted and pour into the fondue pot.
